This info is now severely OUTdated.
EU and Interrail have been merged into much the same ticket and well over 90-95% of these are now sold online and as app on your phone.
It also means that 2nd cl is now also available for those over the young age.
By far the very worst country for obligatory REServ is RENFE in ESpana-=Spain, as about any train there needs it and most are only available doing it yourself at the estacion=station. Contrary to what OZzies seem to think, REServ is not ´full´ monthes ahead-rather it has not yet opened then. It used to be standard that it opened 2 month ahead-here and there now a bit longer, but 30 days can also still happen. In general best site for trying it is the site of the main (state owned) ´company´ in every country-but not all allow it for passes. Also some trains have smaller quota for passholders-most notably that €* under the channel.
Passes are now valid in 33 countries, incl also f.e. the 3 baltics. Not that it has much value there, but you can do it.
2 or 3 times/yr there is usually a sale-with maybe 10/15% OFF, but with limited validity=NOT in the main summer season/heavy travel time (EUR summer of course=winter for in OZ). A very recent gave 25% OFF as black friday.
There is now also a good forum : community.eurail.com, where all the usual common 1st time Qs are posted and answered already and a few enthusiast trainfans keep on giving info and answering all types of Qs.
